KOMA Singapore: Review

Monday, January 27, 2020

Checked out Koma at Marina Bay Sands recently with the girls. First up, I was blown away by the interior design. Can we all take a moment to marvel at the fact that there's a bridge in this restaurant?

The ceilings are beautifully ornated with oriental motives. They also have private rooms and booths available. The biggest room available would be the one overlooking the entire restaurant on the mezzanine.

Stole a shot on this iconic bridge.

We started our night with some cocktails. we tried their special "Chinese new year cocktail". It was very fruity - and I could mainly taste notes of mandarin oranges. Palette cleanser and refreshing.

We picked 3 appetizers to begin the evening.

From top (clockwise):
Miso Glazed Eggplant w/ sweet ginger red miso and ricotta cheese
Yellowtail Ginger Jalapeno w/ aji amarillo, cilantro, soy and lime
Salmon Pillow w/ roasted jalapeno and smoked avocado

My favourite was the Salmon Pillow which had smoked avocado in a "golden pillow" (y'know those golden biscuits that are so coveted in a Lou Hei?". The smokey goodness would burst in your mouth when you crunch into it. Highly recommended.

Chirashi maki w/ hamachi, maguro, salmon, tai, scallion and chili sesame
The fish was fresh. Though the portion may look small, this dish is pretty filling!

We picked 2 main courses to share:
Scallion fried rice with chicken, shrimp, scallops and mushrooms
Wafu carbonara with uni and smoked butter

The scallion fried rice was a treat for the eyes. They poured soup over the hot plate and mixed it so the rice was slightly mushi-er. I loved the Wafu carbornara which came with an egg on top. The udon was chewy and the sauce was just nice - not to jelak.

We topped it off with dessert.
Bonsai with molten dark chocolate and crunchy praline
Jumbo sesame profiterole with black sesame choux white sesame ice cream and chocolate sauce.

The Bonsai was pretty interesting. It came in an edible chocolate pot which would break into molten lava chocolate. The top bit is a sponge cake.
